The Perfect Side Salad
Ingredients for the Salad
- Baby greens or baby arugula
- Cabbage (it’s okay to use pre-shredded, like Dole’s red cabbage or Cole Slaw mix)
- Fresh beet, peeled and grated
- Toasted pumpkin seeds or sliced almonds
For the dressing
- Fresh lemon juice from ½ - 1 lemon, depending on how juicy it is
- Equal part olive oil
- Salt
Directions:Create an emulsion of the lemon juice and olive oil by combining and gently whisking together until combined. Add salt and stir a little more.
Combine salad ingredients. Toss with dressing and serve immediately.
