Aleta's Sweet Corn RelishServes four generously
Ingredients:
- 4 ears of fresh corn, kernels removed
- 2 large tomatoes, chopped
- 1 cup of grated cheddar cheese
- 2 tablespoons of butter
- fresh basil to taste
- salt and pepper to taste
Directions:In a large skillet over medium heat, melt butter. Add corn kernels and heat throughout.
Add cheese and stir until combined.
Remove from heat and stir in tomatoes and basil. Add salt and pepper to taste.
Serve warm.
As a variation: A variation on the above recipe, try using scallions sauteed with the butter before adding the corn and omit the basil.
