Spinach and Herb Pasta
Ingredients:
- 1 box whole wheat pasta, prepared according to package directions
- One medium lemon, zested and juiced
- 2 tablespoons olive oil
- One large bunch fresh basil, finely chopped
- 2 tablespoons fresh cilantro, finely chopped
- 2 tablespoons fresh chives, finely chopped
- 1 tablespoon fresh dill, finely chopped
- 1 tablespoon fresh rosemary, finely chopped
- 2 cups fresh spinach, coarsely chopped
- 1 container grape tomatoes, sliced in half
- Freshly grated parmesan cheese (optional)
- Salt and pepper to taste
Directions:
In a large bowl, whisk together lemon juice and olive oil. Add zest, followed by herbs. Mix thoroughly, until all herbs are coated. Add spinach and leave on top. Add drained, but still warm, pasta on top and let sit for a few minutes, until spinach is slightly wilted. Add tomatoes and mix well. Add cheese, salt and pepper to taste.
Alternatives: really, any combination of fresh herbs can be used, so long as the basil is the most prominent. You can also add grilled chicken or shrimp, pine nuts or walnuts, and/or fresh mozzarella cheese.
