Boiled Shrimp Salad
Ingredients:
- 1lb shrimp
- 3-4 ripe tomatoes, chopped into 1/4-in pieces
- 1 bulb of fennel, trimmed, cored, and thinly sliced
- 3 ribs of celery, thinly sliced
- 1 red pepper, diced
- 1 bunch of dill, finely chopped
- 1 bunch of coriander, finely chopped
- 3 tblsp olive oil
- 1 lemon, juiced
- Salt and pepper to taste
Directions:
Prepare shrimp as though you were making Mom's Shrimp Cocktail. Let cool in an ice bath.
Prepare other ingredients and combine, reserving the dill and coriander. Add shrimp and mix well. Add herbs according to taste (we recommend using all of it!)
Serve at room temperature.
