Red-Berry Compote
Ingredients:
• 1 small package fresh strawberries,
stems removed and strawberries sliced
• 1 small package fresh raspberries
• 2 tbls water
• 2 tbls sugar
Directions:
In a small saucepan over low heat, combine all ingredients. Cover with a lid and simmer until mixture begins to bubble up, about 5-10 minutes. Remove lid and stir on and off until fruit is soft.
Feeling adventurous? Add pomegranate seeds or a few cranberries to punch up the flavor.
Keeping it simple? Use frozen fruit instead of fresh.
Serving suggestions:
Serve warm over French toast with maple syrup. Add to pancakes after the initial flip (adding to the batter may cause uneven cooking or the fruit to burn). Mix with chantilly cream to top espresso or coffee.
Not breakfast time? Serve on top of ice cream, chocolate or yellow cake, or rice pudding.
