Ratatouille Casserole
Serves 4
Ingredients:
- 4-5 cups ratatouille
- ½ package lean ground turkey meat
- 1 tblsp olive oil
- 1 garlic clove, chopped
- 1 small yellow onion, chopped
- 1 tsp whole cumin
- ½ tsp ground cumin
- ½ tsp onion powder
- ½ tsp garlic powder
- 1 tsp salt
- 1 tsp pepper
- 1 tsp dried parsley flakes
- 1 bay leaf
- 3 cups whole wheat pasta
- Grated parmesan (about ¼ cup)
Directions:
Preheat oven to 400º.
In a medium bowl, combine turkey with cumins, onion and garlic powders, parsley, and salt and pepper.
In a saucepan, heat oil over medium to medium-high heat until hot, but not smoking. Cook onions and garlic until just brown. Add ground turkey mixture and cook, stirring and breaking up constantly until it’s cooked through and crumbly. Add ratatouille and bay leaf and simmer over low heat.
Cook pasta according to package directions. Drain and add to ratatouille mixture. Pour into a baking dish and sprinkle with parmesan cheese. Bake for 10-15 minutes, until warm throughout
and cheese is melted. Remove bay leaf before serving.
