Pumpkin Chocolate Chip Muffins
Makes about one dozen muffins
Ingredients:
- 1 ½ cup flour
- 2 tsp of baking powder
- ½ cup sugar
- ½ tsp cinnamon
- ½ tsp salt
- 1 cup milk at room temperature
- ½ cup pumpkin
- 4 tbsp melted butter
- 1 egg at room temperature, slightly beaten
- 6 ounces semi-sweet chocolate chip
Directions:
Preheat oven to 400º.
Combine flour, sugar, baking powder, cinnamon, and salt in a mixing bowl. In a separate bowl, combine the pumpkin, milk, butter and egg. In small batches, add wet ingredients to dry ingredients, stirring well. Add chocolate chips.
Spoon mixture into greased muffin cups (liners do not work well for this recipe!), filling each ¾ full.
Bake for 15-20 minutes or until a tester inserted in the center comes out clean.
