Pumpkin Bread
Makes two loaves
Ingredients:
- 2 cups sugar
- 3 cups flour
- 2/3c. butter at room temperature
- 4 large eggs, beaten
- 1 1lb can pumpkin
- 2/3c apple cider*
- 1/2 tsp baking powder
- 1 1/2 tsp salt
- 2 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp ground cloves
- 3/4c. dried cranberries
- 3/4c. chopped walnuts (optional)**
Directions:
Preheat oven to 350º.
Combine dry ingredients and set aside. Cream butter and sugar.
Add eggs.
Stir in pumpkin and cider. Add dry ingredients to pumpkin mix until well combined. Stir in nuts and cranberries. Turn into two greased 9"x5"x3" loaf pans. Bake 70-80 minutes, until a cake tester inserted in the middle of the bread comes out clean.
*If you don't have any apple cider, you can use whatever juice you have around – orange, pineapple, etc.
**If not using walnuts, you can double the amount of cranberries
