Mom’s Shrimp Cocktail
Ingredients:
- 1 – 2 lbs of uncooked shrimp, de-veined
- 3 – 5 thin slices of lemon and yellow onion
- 1 tablespoon of fresh chopped thyme, or 1 tsp of dried
- A few black peppercorns
- 1 bayleaf
- A generous teaspoon or so of salt
Directions:Combine all ingredients in an inch of water and simmer on low heat. Steam shrimp (covered) until all are pink, checking frequently so as not to overcook them. It doesn’t take very long!
For the cocktail sauce, combine Heinz’s cocktail sauce with horseradish and lemon to taste.
