Mom’s Cut-Out Cookies
(I believe this originally was a Betty Crocker recipe)
Makes a lot...depending on the size of the cookie cutter
Ingredients (cookies):
- 1 cup of butter, softened at room temperature
- ½ cup sugar
- 1 egg
- 3 tsp vanilla
- 3 cups of flour
½ tsp baking powder
- Pinch of salt
Ingredients (frosting):
- Powdered sugar
- Water
- Food coloring
Directions:Preheat oven to 425º.
In an electric mixer fitted with a paddle attachment, beat butter and sugar until fluffy. Add egg and mix well. Stir in vanilla.
Sift together flour, baking powder, and salt and add slowly to batter.
Chill dough (Martha’s recipes usually suggest forming discs of dough and wrapping them individually before chilling). Roll thin (1/4 – 1/8 inch) and cut into desired shapes. Place on ungreased cookie sheet (or silpat on cookie sheet) and bake for 5 – 7 minutes.
**If they’re thin (or you’ve used a lot of flour to roll them out on), they will burn quickly, so keep an eye on them!
**To make frosting, pour some powdered sugar into a small bowl or Tupperware. Add a small amount of water and stir, adding water until you get a desired consistency—not too running, not too thick. Add a few drops of food coloring until you make the color you desire.
Cool on a drying rack and then frost!
