Good morning, Vamps!
Miracle of miracles, Baby E slept through the night last night!! For the first time ever!! I am a new woman today.
Last night's salmon which I mentioned here, ended up being absolutely delicious AND super easy. Here's what I did:
- Made a marinade of brown sugar, orange juice (I didn't have any other citrus--ie, lemon or lime--in the house, so figured I should try it, plus my dear mother told me she's made fish cooked in it before), soy sauce, onion powder and garlic powder, and olive oil. Put the salmon in it and covered it with saran wrap to speed up the marinating process.
- After an hour or so, I heated up a lightly oiled grill pan and put the salmon on, turning them once I could see they'd been more or less cooked through. All in all, I think they cooked for about 10 minutes. I could tell they were done when I tried to move them with tongs and the salmon started flaking off.
- Inspired by this week's featured recipe, I tossed it in a salad with cucumber and mango. No need for dressing.
- I served it with some whole wheat pasta that I'd mixed with browned butter and parm (a la everynight orzo), but grilled flatbread would have been even more delicious.
