Joanna’s Endive & Orange Salad
Balsamic Viaigrette Dressing
Ingredients:
- 1tsp Dijon Mustard (I prefer Grey Poupon, but you can use your favorite)
- 3tsp Balsamic Vinegar
- 1/3 cup extra virgin olive oil
- A pinch of your favorite sweetener (sugar, Sweet ‘n’ Low, Splenda, etc.)
Directions:
Whisk together the mustard and vinegar. Add olive oil slowly whisking vigorously and constantly to make an emulsion (alternatively, you can do this in a blender)
Salad Ingredients:
- 1 bunch of endive
- Mandarin orange wedges (fresh or canned, see directions for amount)
- Crumbled gorgonzola cheese
Directions:
Cut the ends off the endive. Pull off the larger outside leaves and keep them whole. Make a Chiffonnade http://en.wikipedia.org/wiki/Chiffonade of the smaller endive leaves. In each wedge place a few wedges of orange some crumbled gorgonzola. Place 3 wedges per plate. Dress to taste. Sprinkle the Chiffonnade of endive over the plate as garnish.
