Grilled Shrimp Skewers
Ingredients:
- 1lb shrimp, defrosted if frozen
- Skewers
For the marinade:
- 1/2 cup olive oil
- Juice from 3-4 limes and 1 lemon
- 1 bunch of fresh cilantro, chopped
- 1 tblsp fresh mint, chopped
- 1 tblsp of coarse sea salt
- 1 tsp sugar
Directions:
If using wooden skewers, soak them in lukewarm water for at least an hour before using.
Combine all ingredients for marinade in a large bowl, mixing well. Add shrimp (with tails on), and cover with marinade. Let sit for two hours (if you don't have that much time, cover with saran wrap to expedite the marinating process).
Skewer shrimp and place on grill until cooked through, approximately 3 minutes on each side.
