Grilled Shrimp Salad
Ingredients:
- 5 large shrimp/person
- Baby greens
- Cubed mango
- Sliced cucumber
- Sliced avocado
For the marinade: fresh lemon and lime juice, olive oil, fresh ginger (about a 1-inch piece, chopped), fresh garlic (2-3 cloves, chopped), salt and pepper
Directions:
Prepare the marinade by mixing all ingredients together. You should have enough to cover the amount of shrimp you’re using, but the shrimp should not be swimming in it. Stir in shrimp and let marinate for a couple of hours. Didn’t leave yourself a lot of marinating time? Cover the bowl with saran wrap to speed up the process.
Grill the shrimp in a grill pan. If you don’t have a grill or grill pan, cook in a skillet until cooked through. Prepare the salads as prettily as possible, starting with the mixed greens and placing the other ingredients in a pattern throughout the plate. Serve at room temperature.
Note: the salad does not need dressing. If you choose to serve it with a dressing, we suggest just olive oil, lemon juice, and salt.
