Everynight Orzo
Ingredients:
- ¾ cup dried orzo
- 1-2 cubes of chicken or vegetable bullion
- 2 tbsp butter
- Salt
- ¼ cup grated parmesan cheese
Directions:
In a small saucepan, bring 2 cups of water to a boil, adding bullion so it dissolves. Add orzo and cook according to package directions. With a few minutes left to go, brown the butter* in a small pan. Drain orzo and return to saucepan. Stir in butter and parmesan and serve.
*to brown butter, heat over a medium-high heat until melted. Add salt liberally and swirl the pan around so it mixes with the butter. Butter should begin to brown. Continue to cook until it’s the color in between light and dark brown sugar.
