Cucumber Salad
Ingredients:
- 1 cucumber, peeled and sliced in half and then into thin disks
- 3 scallions, white parts only, sliced (optional)
- 2 tbsp white balsamic vinegar or rice vinegar
- ½ lemon, juiced
- 1 tsp olive oil
- 1 tsp dried dill or 1 tbsp fresh
- Salt and pepper to taste
Directions:
In a small bowl, combine all ingredients, stirring well. Serve chilled or at room temperature.
