Apple Raisin Muffins
Makes about 1 ½ dozen
Ingredients for the topping:
- ½ cup walnuts
- ½ cup light brown sugar
- ¼ cup all-purpose flour
- 1 tsp cinnamon
- 1 tsp lemon zest
- 2 tablespoons of melted butter
Combine ingredients and set aside.
Ingredients for muffins:
- 2 cups all-purpose flour
- 2 tsp of baking soda
- ½ cup white sugar
- ¾ cup light brown sugar
- 1 ½ tsp cinnamon
- ½ tsp ground cloves
- 1/8 tsp nutmeg
- 2 cups of apples (Macs or Empires work best), peeled, cored, and coarsely chopped
(about 2 or 3 apples)
- ½ cup raisins (for best results, steam first until nice and plump)
- ½ tsp salt
- ½ cup melted butter
- 3 eggs, slightly beaten
- 4 ounces of cream cheese (half of one bar), at room temperature cut into small pieces
- ½ tsp of vanilla
Directions:
Preheat oven to 375º.
Line muffin tin with papers or lightly grease. Set aside.
In a large bowl, combine flour, sugars, salt, spices, and baking soda. Set aside.
In another large bowl, combine apples, raisins, eggs, butter, cream cheese, and vanilla, stirring well. A half cup at a time, add dry ingredients, stirring until just combined. Portion batter
into muffin tins until 2/3 full and sprinkle generously with topping. Bake for 20 – 25 minutes.
